Aubergines With Rice And Cheese Recipe

Cooking Time: 25 minutes You will need for 4 servings:

2 aubergines 2 oz. Grated cheese

1 Prepare the aubergines as described in the recipe for Aubergines k la Provence.

2 Put the pulp into a basin with the shallot, garlic, most of the cheese, rice, salt and pepper. Mix all well together.

3 Pile into the aubergine shells, sprinkle with the remaining cheese and bake in a moderate oven (350°F – Gas Mark 4).

Beans au gratin.

Cooking Time: about 20 minutes You will need for 4 servings:

11 lb. Scarlet runner or French beans 2 small onions 1 oz.

Butter 1 oz. Flour salt and pepper.

1 pint chicken or other white stock nutmeg.

4 oz. Grated cheese.

1 tablespoon chopped parsley.

1 shallot, finely chopped 1 small clove garlic.

2 oz. Cooked rice salt and pepper.

1 Prepare and slice the beans. Cook in boiling salted water until tender.

2 Meanwhile, peel and slice the onions thinly and fry in the butter until golden brown.

3 Add the flour and mix well.

4 Add the stock gradually. Stir until boiling and stir for 1 minute. Add seasoning and a good pinch of nutmeg.

5 When the beans are tender, drain thoroughly and add them to the sauce.

6 Add most of the cheese and turn into a serving dish.

7 Sprinkle the remaining cheese and parsley on top.
