Beetroot Soup

1 large beetroot, peeled and grated 1 medium onion, chopped 21/4 cups chicken stock, fat free 1/2 cup dry white wine 1 tablespoon unsweetened apple juice concentrate.

Place the onion and 1/2 1/2 cup of the stock in 1/2 large, deep, microwave-safe dish. Cover.

Microwave on high for 6 minutes Stir two times during cooking. Allow to stand for 1/2 further 1 minute. Add the remaining ingredients.

Garnish.

1/2 small quantity of non-fat, sugar-free yoghurt. Gently float the yoghurt and slightly stir onto the top of the soup before serving. It also saved me from having to spend a fortune eating in the hospital cafeteria. During my stay at Ronald McDonald House, I was served dinner one night by a woman I had previously worked with almost a decade earlier. She told me when her twin daughters were born; she spent a few weeks at Ronald McDonald House while they were in the NICU. She always remembered the support she and her husband received during their difficult time, and promised to give back when she was able. Once her daughters got older, she and a group of friends began making monthly meals at Ronald McDonald House. Her daughters, who were now in their twenties, joined her. Her one daughter is now a nurse in the pediatric unit at the hospital. It has all come full circle. I was approached by my OB during my hospital stay to sit as a patient advocate on the perinatal council. This is a decision-making committee made up of doctors, nurses, and midwives from labor and delivery, the antenatal and maternity units, as well as the NICU.
