Beetroot Soup

1 large beetroot, peeled and grated 1 medium onion, chopped 21/4 cups chicken stock, fat free 1/2 cup dry white wine 1 tablespoon unsweetened apple juice concentrate

Place the onion and 1/2 1/2 cup of the stock in 1/2 large, deep, microwave-safe dish. Cover.

Microwave on high for 6 minutes Stir two times during cooking. Allow to stand for 1/2 further 1 minute. Add the remaining ingredients. Cover.

Microwave on high for 6 minutes Stir at least two to three times during cooking. Allow to stand for 1/2 further 1 minute.

Garnish

1/2 small quantity of non-fat, sugar-free yoghurt. Gently float the yoghurt and slightly stir onto the top of the soup before serving.
