Broad Beans With Rice Recipe

Cooking Time: about 10 minutes.

You will need for 4 servings:

3-4 rashers streaky 4 oz. Cooked rice bacon 1 oz. Butter 1 pint yoghourt 1 egg yolk salt and pepper 8 oz. Cooked broad beans

1 Chop the bacon into small pieces and fry until crisp.

2 Add to the yoghourt with a little seasoning.

3 Add the beans, rice and butter and stir over a gentle heat until the mixture is well heated through.

4 Stir in the egg yolk and reheat without boiling.

Chicory and ham au gratin.

Cooking Time: about 30 minutes.

4 heads of chicory 2 oz.

Grated cheese lemon juice 1 tablespoon thin 4 slices of cooked cream ham 1 oz. Butter.

1 pint basic white sauce (82)

1 Parboil the chicory in boiling water to which a squeeze of lemon juice has been added.

2 Drain, then wrap each in a slice of ham and put into a fireproof dish.

3 Make up the white sauce, add half the cheese, cream and lemon juice to taste.

4 Pour over the chicory, sprinkle the rest of the cheese on top and dot with butter.

5 Put into a moderate oven (350°F – Gas Mark 4), until the sauce begins to colour and the chicory is tender.
