Burgundian Meat Balls Recipe
Cooking Time: about 30 minutes
You will need for 4 servings:
1 lb. raw minced beef chopped parsley
2 oz. fresh white breadcrumbs salt and pepper 1 level teaspoon grated lemon rind 1 small onion
4 tablespoons oil
1 packet oxtail soup f pint water 1 pint red wine
4 oz. mushrooms, sliced
1 Mix meat, crumbs, seasoning, lemon rind, onion, and parsley.
2 Divide mixture into 8 portions and shape into balls.
3 Heat oil, add meat balls and brown. Remove from pan.
4 Blend soup into oil remaining in the pan. Stir in water and wine.
5 Bring to the boil, add mushrooms.
6 Reduce heat, replace meat balls. Cover and simmer for 20 minutes.
7 Serve with plain boiled spaghetti or noodles.
