Capsicum and onion Soup

1 large red pepper, seeds and core 2 tomatoes, peeled and chopped removed, cut into strips 1 cup mushrooms, sliced

1 large green pepper, seeds and 1 tablespoon cornflour, extra water

Core removed, cut into strips to mix

2 large onions, chopped 1/2 teaspoon marjoram

1 clove garlic, crushed pinch coriander

21/2 cups canned vegetable juice, pinch cayenne pepper no added salt or sugar pinch paprika

Place the onions, garlic and 1/2 1/2 cup of vegetable juice into 1/2 small, deep, microwave-safe dish. Cover.

Microwave on high for 6 minutes Stir two times during cooking.

Place all the remaining ingredients into 1/2 large, deep microwave-safe dish. Add the cooked onions. Cover.

Microwave on high for 10 to 12 minutes Stir two to three times during cooking. Allow to stand for 1/2 further 3 to 4 minutes.

Serves 4 to 6
