Cheesy Fish Pie Recipe

Cooking Time: 25 minutes You will need for 4 servings:

1 lb. cod fillets

2 oz. butter 1 pint milk

salt and pepper 1 hard-boiled egg 1 oz. cornflour

1 teaspoon dry mustard

1 packet mashed potato

3 oz. grated Cheddar cheese

1 Simmer the cod fillets gently in the butter and milk, until tender, with a sprinkling of salt and pepper.

2 Remove from the pan and place in a flameproof dish, with the egg chopped roughly.

3 Blend the cornflour and mustard with a little of the milk. Stir into the pan containing milk and butter and bring to the boil. Boil for 1 minute. Pour over the fish.

4 Make up the potato according to the instructions on the packet. Spread over the fish.

5 Sprinkle with grated cheese and warm through in the oven at 400°F Gas Mark 6, or under the grill.

To use cooked fish

Hake au gratin

Cooking Time: 15-20 minutes You will need for 4 servings:

8 oz. cooked hake 2 oz. grated cheese

1 4-oz. can shrimps J pint white sauce (21)

1 egg

2 bananas lemon juice little butter

1 Flake the fish, removing all skin and bone.

2 Add the shrimps, reserving a few for garnish.

3 Make the white sauce, cool a little, then add the yolk of egg and half the cheese.

4 Whisk the egg white stiffly and fold into the sauce.

5 Put the fish into a fireproof dish and pour the sauce over.

6 Sprinkle with the remaining cheese and dot with butter.

7 Bake in a moderate oven (350°F – Gas Mark 4) for about 15 minutes.

8 Slice the bananas, brush with lemon juice and a little melted butter.

9 Arrange round the edge of the dish and return to the oven for a further 5 minutes.
