Chinese Vegetable Omelette Recipe
Cooking Time: 10-15 minutes You will need for 4 servings:
1 medium-sized onion 1-2 sticks celery
1 oz. butter 1 green pepper
4 eggs 2 oz. mushrooms salt and pepper
1 Peel and chop the onion very finely and cook in the butter until soft and lightly browned.
2 Beat the eggs lightly and add the seasoning.
3 Chop the celery, green pepper and mushrooms very finely and add to the eggs.
4 Pour the egg mixture into the pan with the onion and stir until the eggs are firm.
5 Serve alone or with mushroom sauce, page 83.
