Baltimore Egg Nog

You will need for 14-16 persons:

6 eggs 2 pints milk

6 tablespoons sugar 2 pints thick cream

1 pint Madeira 1 teaspoon grated

4 bottle dark rum nutmeg

4 bottle brandy

1 Separate the eggs, putting the whites into a mixing bowl and the yolks into the punch bowl.

2 Beat the egg yolks until smooth, gradually adding the sugar.

3 Still stirring, slowly add the Madeira, rum and brandy.

4 Whip the egg whites until very stiff.

5 Pour the milk and cream into the punch bowl and whip the mixture vigorously.

6 Fold in the egg whites.

7 Sprinkle the top with nutmeg and serve.

Lion Egg Nog

You will need for 8-10 persons:

12 eggs 1 pint thick cream

12 teaspoons sugar 2 pints milk

4 bottle whisky 1 teaspoon grated

4 bottle dark rum nutmeg

1 Separate the eggs, putting the whites into a mixing bowl and the yolks into the punch bowl.

2 Beat the yolks until smooth, adding the sugar at the same time.

3 Gradually add the whisky and rum stirring all the time.

4 Whip the cream until stiff, then fold into the mixture in the punch bowl.

5 Add the milk.

6 Stir together.

7 Whip the egg whites until stiff.

8 Combine the egg whites with the mixture.

9 Stir gently; sprinkle with nutmeg and serve.
