Coffee Sauce Recipe

Cooking Time: 2-3 minutes You will need:

1 pint strong black 2 heaped tablespoons coffee sugar

3 level tablespoons 1 oz. luxury margarine arrowroot

1 Blend coffee and arrowroot together.

2 Place in a small saucepan, bring to the boil and simmer gently for 2-3 minutes.

3 Remove from the heat, cool slightly, and stir in the sugar and margarine.

Jam sauce

Cooking Time: 5 minutes You will need:

1 pint water 1 tablespoon jam

1 oz. sugar few drops lemon juice

1 Boil water and sugar for 3-4 minutes.

2 Stir in jam and lemon juice.

3 Bring to boiling point and strain.

Note:

If red jam is used add a few drops of cochineal to improve the colour.

Marmalade sauce: Make as jam sauce, substituting 1 tablespoon marmalade for jam.

Cornflour sauce

Cooking Time: about 5-10 minutes You will need:

1 teaspoon cornflour 1 dessertspoon castor

1 pint milk sugar strip lemon rind

1 Mix the cornflour with a little of the milk.

2 Heat the remainder of the milk with the lemon rind.

3 Pour the hot milk on to the cornflour, stirring continuously with a wooden spoon.

4 Boil for 5 minutes stirring all the time.

5 Remove the lemon rind and add the sugar.
