Country Rice Recipe

Cooking Time: 25 minutes

You will need for 4 servings:

4 tablespoons corn oil 11 pints water

8 oz. rice 2 oz. cooked ham

1 packet country 2 oz. mushrooms, vegetable soup sliced

1 Heat corn oil, add rice, saute until golden.

2 Add the contents of the packet of soup and water, bring to the boil, stirring, cover and simmer for 10 minutes.

3 Stir in diced ham and mushrooms and continue cooking slowly until the liquid has been absorbed. This will take about 10 minutes.

Rice diablo

Cooking Time: about 15 minutes

You will need for 4 servings:

12 oz. long grained 1 small onion, finely rice grated 1 lb. liver sausage, 1 tablespoon mild unsliced mustard 3 oz. butter 4 tablespoons 1 tablespoon lemon pineapple tidbits juice

1 Boil rice for 12 minutes in salted water.

2 Pour into colander, drain, rinse and drain again. Place colander over a pan of simmering water and steam until dry.

3 Remove skin from sausage and cut into 8 slices. Place in grill pan without the rack.

4 Blend butter with lemon, onion and mustard.

5 Spread over sausage and grill until browned and sizzling (about 5 minutes). Remove from grill pan and keep hot.

6 Drain pineapple, toss in the dripping in the pan, heat under a hot grill for 5 minutes.

7 To serve, mix pineapple with rice, pile into a hot dish and place the sausage on top.
