Ingredients:

4 oz. bean curd mashed

4 oz. ground pork

3 oz. ground pork cooked

1 tbsp. sherry

Salt to taste

1 tbsp. each chopped ginger and scallion

2 tbsp. cornstarch dissolved in water

1/2 tsp. baking soda

3 egg yolks

2 tbsp. sesame oil

2 tbsp. wheat flour

A little Sichuan pepper powder mixed with ground salt

2 cups vegetable oil

To Prepare: ,

1. Mix well mashed bean curd, ground pork, ground cooked pork, sherry, salt, chopped scallion and ginger, cornstarch, wheat flour, soda, egg yolks, Sichuan pepper powder. Add sesame oil and roll into about 5 balls.

2. Heat oil in a pan over a medium flame, gradually add the balls one by one and fry. Take out and crush each ball with the back of an iron ladle. Increase the heat and put all the balls back into the pan to fry again until crip inside and out. Serve with Sichuan pepper powder and salt.
