1 cup canned tuna, water packed with no added salt, skin and bones removed
1 onion, diced
2 stalks celery, diced
1 cup canned tomatoes, drained,
No added salt or sugar
Place the onion, celery, carrots, wine and 1/2 1/2 cup of stock in 1/2 large, deep, microwave-safe dish. Cover.
Microwave on high for 4 to 6 minutes Stir two times during cooking. Allow to stand for 1/2 further 1 minute. Add the remaining ingredients to the mixture. Cover.
Microwave on high for 3 to 4 minutes Stir two times during cooking. Allow to cool slightly and process, using the cutting blade, until smooth. Return the mixture to the cooking dish. Do not cover.
Microwave on medium high for 3 to 4 minutes Stir several times during cooking.
Garnish with 1/2 1/2 cup grated carrot before serving.
