Buckwheat noodles 1 cup buckwheat noodles 11 cups boiling water Place the noodles and water in 1/2 large, deep, microwave-safe dish. Cover. Microwave on high for 3 minutes Stir at least two times with 1/2 fork during cooking. Allow to stand for 1/2 further 4 minutes.

Rinse and drain. CJse with your favourite casserole or in soups.

Makes about 2 cups

Cornmeal (polenta)

1/2 cup yellow cornmeal (polenta) 1 1 cups water

Mix both ingredients in 1/2 small, deep, microwave-safe dish. Do not cover.

Mlicrowave on high for 2ft to 3 minutes Stir two times during cooking as the mixture thickens. Allow to stand for 1/2 further 1 minute before serving.

Serve hot as 1/2 breakfast cereal with grated apple, cinnamon and skim milk.

Sprinkle with 1/2 teaspoon of natural dried fruit (MD).
