Ski Punch

You will need for 12-14 persons:

1 pint tea sugar

juice 3 fresh lemons 2 tablespoons Curasao

juice 6 fresh oranges 1 bottle dark rum

(or J pint canned, unsweetened juice)

1 Heat the tea, fruit juices and sugar until the mixture comes to the boil.

2 Pour the Curasao and rum into a warmed punch bowl and add the boiling tea mixture.

3 Stir thoroughly; spoon and serve in mugs.

Negus Cup

You will need for 10-12 persons:

1 bottle port juice and rind 1 lemon

1 tablespoon sugar or 1 teaspoon nutmeg sugar syrup 2 pints boiling water

1 Pour the port, lemon juice and sugar into a wanned punch bowl.

2 Add the cut up lemon rind and the grated nutmeg.

3 At the last moment pour in the boiling water.

4 Stir and spoon into punch cups.

Tom and Jerry

You will need for 12-14 persons: 6 eggs 1 bottle brandy 3 tablespoons sugar 1 pint boiling water or or sugar syrup milk

1 bottle rum grated nutmeg

1 Separate the eggs.

2 Whip the whites until stiff.

3 Beat the yolks until smooth.

4 Fold the beaten egg yolks into the stiff egg whites.

5 Add sugar, stir gently and pour mixture into a warmed punch bowl.

6 Very slowly add the rum and brandy, stirring constantly to avoid curdling.

7 Pour in the boiling milk or water and sprinkle with nutmeg.

8 Stir gently and serve in mugs.

You will need for 14-16 persons: juice and rind 1 fresh 2 pints boiling water lemon 1 pint ale 2 tablespoons sugar or 1 bottle brandy sugar syrup 1 bottle whisky

1 Put the lemon juice, sugar and water into a saucepan and heat until the mixture comes to the boil.

2 At the same time in another saucepan heat the ale until it comes to a boil.

3 Pour these mixtures into a warmed punch bowl.

4 Add the sliced lemon rind, brandy and whisky.

5 Stir gently and serve in mugs.
