Egg Salad Recipe

You will need for 4 servings:

1 lettuce 5-6 sardines or

3 hard-boiled eggs anchovies

5-6 tablespoons few radishes mayonnaise (see watercress or page 82) mustard and cress

1 Prepare the lettuce and put into a fairly shallow salad bowl.

2 Cut the eggs in half lengthwise and arrange on the lettuce cut-side downwards.

3 Coat each with the mayonnaise.

4 Cut the anchovies or sardines into fillets and use with the radishes and cress as garnish.

Italian salad

You will need for 4 servings:

4 oz. cooked boiled 1 teaspoon finely rice 1 tablespoon tomato pur6e 8 oz. cooked cold beef salt and pepper chopped onion

2-3 hard-boiled eggs

1 tablespoon finely chopped parsley

2-3 tablespoons French dressing little made mustard

1 Put the rice into a basin and mix with the tomato purde.

2 Add the beef, shredded, and the onion, and season with salt and pepper.

3 Arrange in a serving dish, put slices of hard-boiled egg round the side and sprinkle with parsley.

4 Just before serving pour over a little French dressing to which a small quantity of made mustard has been added.
