Scallion and ginger juice 1/2 cup clear broth Salt to taste.
1 tbsp. Cornstarch dissolved in water To Prepare:
1. Mash bean curd and egg yolks.
2. Mix chicken with wine, ginger and scallion, add broth, salt, dissolved cornstarch, mashed bean curd and egg yolks and mix well.
3. Heat oil in a pan, pour in half of the mixture, and stir. Immediately add the remaining mixture, mix well until it shines.
