EGGPLANT FRIED BEAN CURD

Ingredients:

3 oz. minced bean curd

3 oz. minced shrimp

1 tsp. sherry

Minced ginger and scallion, Sichuan pepper powder to taste

1 tbsp. sesame oil

1 tbsp. Sichuan pepper powder roasted with salt

A pinch of salt

2 tbsp. cornstarch

3 egg whites

1 small eggplant (about 5 oz.)

1 tbsp. flour

2 cups vegetable oil

To Prepare:

1. Combine bean curd, shrimp, sherry, ginger, scallion, sesame oil, Sichuan pepper, salt, cornstarch and one egg white. Add the remaining egg white to cornstarch and mix into a paste.

2. Peel eggplant skin and slice. Make slits on each piece of egg plant and wedge the mixture between the slits. Cover with flour, and the paste and deep fry. Dip into pepper powder and eat.
