Fish Cutlets Recipe
Cooking Time: about 10 minutes You will need for 4 servings:
8 oz. cooked white fish
2 oz. butter
2 oz. flour J pint milk salt and pepper
1 teaspoon anchovy essence egg and breadcrumbs fat, for deep frying
1 Flake the fish and remove all skin and bone.
2 Make a sauce with butter, flour and milk.
3 Add salt, pepper, lemon juice and anchovy essence.
4 Add the fish and mix thoroughly.
5 Spread on to a wetted plate and leave to become cold.
6 Divide into equal portions and shape into cutlets.
7 Coat with egg and breadcrumbs and fry in hot fat.
8 Drain well and serve with lemon and parsley.
Russian fish pie
Cooking Time: 20-25 minutes You will need for 4 servings:
8 oz. flaky or rough puff pastry (86)
12 oz. cooked white fish
1 tablespoon chopped parsley
1 dessertspoon chopped capers 1 hard-boiled egg, chopped little white sauce seasoning
1 Roll the pastry into a square shape, trim the edges and keep for decoration.
2 Flake the fish and mix it with the parsley, capers and hard-boiled egg.
3 Moisten with a little white sauce and season.
4 Put the fish into the centre of the pastry. Damp the edges and fold the comers to the centre, enclosing the fish. Press the edges well together and decorate with the trimmings of pastry.
5 Brash over with egg or milk and bake about 20 minutes in a hot oven (425°F – Gas Mark 7).
