Fish Puffs Recipe

Cooking Time: 5-10 minutes You will need for 4 servings:

8 oz. cooked white fish

salt and pepper lemon juice

2 teaspoons anchovy essence

2 eggs

1 oz. flour fat, deep for frying

1 Flake the fish very finely, removing all skin and bone.

2 Season very carefully and add lemon juice and anchovy essence.

3 Add the egg yolks and the flour and beat until the mixture is creamy.

4 Fold in the stiffly beaten egg whites.

5 Drop spoonfuls into hot fat and fry until crisp and well puffed.

6 Drain and serve with devilled sauce (22).

Fish and potato pie

Cooking Time: 20 minutes

You will need for 4 servings: 1 oz. butter 2 tomatoes, peeled J small onion, and chopped chopped finely 2 oz. grated cheese 1 oz. flour 1 lb. cooked white fish 1 pint milk lemon juice or vinegar salt and pepper 1 lb. mashed potatoes

1 teaspoon tomato pur§e

1 Melt the butter, add the onion, cook until soft but not coloured.

2 Add the flour and mix well.

3 Remove from the heat, add the milk and stir well. Return to the heat, stir until boiling and cook for 3 minutes.

4 Add seasoning, tomato puree, tomatoes and grated cheese.

5 Add the fish and correct the seasoning, adding lemon juice or vinegar as required.

6 Pour into a fireproof dish and cover with the mashed potato.

7 Brush over with a little milk and put into a moderately hot oven (375°F – Gas Mark 5) to brown.
