Potato and apple toss 2 large potatoes, peeled, diced, cooked (54) 1 red apple, cored, diced (skin left on) 1/2 cup celery, diced finely 4 shallots, chopped
1/2 cup yoghurt, non-fat, sugar free 1 teaspoon unsweetened apple juice concentrate 1 tablespoon lemon juice or orange juice 1/2 teaspoon dry mustard
1 teaspoon dried dill
Prepare and combine the potatoes, apple, celery and chives. Thoroughly mix the dressing ingredients and toss through the potato-apple mixture. Chill and serve.
