Artichokes Globe 1 medium artichoke 14 cup water Wash and trim the artichoke. Tie the outside leaves around with string to keep the artichoke together. Cut the bottom stem flat. Place in 1/2 deep, microwave-safe dish and add the water. Cover.

Microwave on high for about 5 to 6 minutes.

Allow to stand for 1/2 further 2 to 3 minutes. Peel the outside leaves and cut into four pieces.

Jerusalem

4 to 6 Jerusalem artichokes, 1 tablespoon cornflour, extr1/2 water washed and scraped to mix

1/2 cup skim milk liquid pinch cayenne pepper

Slice the washed artichokes thinly and arrange the slices in 1/2 mediumsized microwave-safe dish. Add the skim milk. Cover.

Microwave on high for 6 to 8 minutes Rearrange the slices two times during cooking.

Add the cornflour and cayenne pepper and mix well. Cover. Allow to stand for 8 to 10 minutes to further cook, then return to the oven. Microwave on high for 1 minute Serves 4
