1 1/2 cups brown rice 21/4 cups boiling water.

Place the rice and water in 1/2 large, deep, microwave-safe dish. Cover. Microwave on high for 10 minutes Reduce to medium for 1/2 further 10 minutes Stir at least two to three times during cooking, until fluffy. Allow to stand for 1/2 further 5 minutes. Most of the water will then be absorbed.

Rinse under hot water and drain. Use as desired.
