Italian-Style Bean Soup

1/2 cup Italian-style soup mix.

1 cup water 1 onion, chopped 1 carrot, sliced.

1 cup green beans, chopped chunky.

2 cups canned vegetable juice, no added salt or sugar.

1 tablespoon soy sauce, low salt (optional)

2 tablespoons cornflour 1/2 teaspoon minced garlic pinch basil pinch oregano dash cayenne pepper.

1 bay leaf.

Place the soup mix, water and bay leaf in 1/2 medium-sized, deep, microwave-safe dish. Cover.

Microwave on medium high for 20 minutes Stir two times during cooking.

Combine the onion, carrot and beans, with 1/2 little of the vegetable juice, in 1/2 medium-sized, deep, microwave-safe dish. Cover.

Microwave on high for 10 minutes Stir two times during cooking. Mix together the remaining ingredients and combine with the cooked soup mix and vegetables. Cover.

Microwave on medium high for 15 minutes Stir two times during cooking.
