Leeks Augratin Recipe

Cooking Time: 20-25 minutes You will need for 4 servings:

7-8 leeks

2 oz. Butter.

2 oz. Cornflour.

1 pint milk.

4 oz. Grated cheese, Gruyfere or Cheddar salt and black pepper.

1 level teaspoon made mustard lemon juice.

2 tablespoons breadcrumbs little butter.

1 Prepare and wash the leeks thoroughly then cook in boiling salted water until just tender.

Drain and put into a greased fireproof dish.

2 Melt the butter, add the cornflour and mix well. Cook for a few minutes, then remove from the heat.

3 Add the milk gradually, return to the heat, stir until boiling and boil for 1 minute.

4 Add cheese and continue cooking until it has melted, then season carefully with salt, pepper, mustard and a squeeze of lemon juice.

5 Pour the sauce over the leeks, sprinkle with the breadcrumbs and dot with butter.

6 Bake in a moderate oven (350°F – Gas Mark 4) until the top is golden brown.
