Lose Weight Recipes

Salads are an important part of the Pritikin diet and these recipes will enhance any of the meals prepared in the microwave oven. The only vegetables not permitted are olives and avocados, as they have too high 1/2 fat content. All other vegetables may be used in any combination, according to your taste and desire. There are unlimited combinations using both acceptable vegetables and fruit. But, be sure that you do not exceed your fruit allowance.

Ml Cucumber and orange salad

1/2 cup yoghurt, non-fat, sugar free 1 tablespoon unsweetened apple juice concentrate

2 small cucumbers, peeled, thickly sliced

2 oranges, peeled, pith and pips removed, chopped


Prepare and combine the cucumbers and orange pieces in 1/2 salad bowl. Thoroughly mix the yoghurt and apple juice concentrate. Gently fold through the mixture. Garnish with chopped chives or salad herbs.

Serves 4

Green salad toss

6 small lettuce, tom into small pieces

1 cup endives, broken into pieces 1 stalk celery, diced 1 cup cucumber, sliced (skin on) 1/2 green pepper, seeded, diced 1 tablespoon shallots, chopped

Herb dressing

6 cup yoghurt, non-fat, sugar free 1 tablespoon fresh lemon juice 1 tablespoon fresh orange juice generous shake salad herbs

Toss the salad ingredients in 1/2 medium-size salad bowl. Mix the dressing ingredients and toss through the salad.

Serves 4
