Luncheon Salads Recipe

You will need for 4 servings:

1 lb. cooked potatoes

2-3 spring onions

1 teaspoon chopped parsley salad dressing (82)

1 head lettuce 4 cold cooked sausages 4 slices cooked ham 8 oz. tomatoes

2 hard-boiled eggs

1 Dice the potatoes and mix with the chopped onion and parsley.

2 Add 1-2 tablespoons salad dressing, toss lightly and pile in the centre of a large flat dish.

3 Arrange lettuce round.

4 Put a sausage on to each slice of ham and roll up.

5 Arrange the ham rolls round the dish evenly.

6 Garnish with slices or wedges of tomato and

2 tablespoons thin cream 12 oz. cooked ham or other cooked meat 2 oz. Danish blue cheese

1 lettuce

3-4 dessert apples lemon juice 1 small green pepper mayonnaise, about 4 tablespoons (82)

1 Line a salad bowl with the lettuce.

2 Reserve one apple for garnish, peel, core and slice the rest and sprinkle with lemon juice.

3 Cut the pepper into thin slices.

4 Mix the cream with the mayonnaise.

5 Mix the meat, cut into dice, apples and pepper and toss lightly in the mayonnaise.

6 Put into the salad bowl and crumble the cheese on top.

7 Garnish with slices of unpeeled apple.
