Main Meal Salad Recipe

You will need for 4 servings:

1 head lettuce 2 oz. cooked chicken

2 hard-boiled eggs 4 oz. cheese

4 tomatoes watercress

4 oz. cooked ham French dressing (see

2 oz. tongue page 82)

1 Wash and dry the lettuce, and line the bottom of a fairly shallow salad bowl.

2 Cut the eggs into quarters and the tomatoes into wedges.

3 Cut the meat and cheese into strips.

4 Arrange the meat and cheese in little heaps on lettuce and eggs and tomatoes in between.

5 Put the watercress in the centre.

6 Serve with French dressing (82).

Beef salad

You will need for 4 servings:

1 head lettuce 1 clove garlic,

12 oz.-1 lb. cold chopped finely cooked beef 2 tablespoons parsley,

2 apples chopped

2 sticks celery 3 tablespoons oil

1-2 shallots, chopped 1 tablespoon vinegar finely salt, freshly ground black pepper

1 Prepare the lettuce and use to line a salad bowl.

2 In a large basin put the beef and cut into large dice, peeled, cored and diced apples, chopped celery, shallots, garlic and parsley.

3 Mix the oil, vinegar and seasoning together and pour over the contents of the basin.

4 Mix all well together and pile on top of the lettuce.
