1/2 medium lettuce, tom into small pieces
1 cup celery, chopped (tops as well)
3 mandarins, peeled, pips and veins removed 1/4 cup roasted sprouts
2 tablespoons vinegar 1/2 cup unsweetened apple juice 1 tablespoon parsley, chopped 1/2 teaspoon tabasco sauce
Gently toss the lettuce, celery and mandarins. Mix the dressing ingredients together and toss through the salad. Top with roasted sprouts. Serve at once or the sprouts will go soft.

Hearing my visitor had been turned away and having no way of contacting her, as I didn’t have a cell phone, was my breaking point. My weeks in the hospital and all I had gone through finally caught up with me. I broke down and cried. This was the ugly crying I talked about. It wasn’t pretty. My son’s nurse felt horrible and I didn’t care. In a blur I walked down to antenatal into the room of a mom friend, my former hospital room neighbor. At first the nurses tried to tell me to leave, as my friend was in early stages of labor and having her own rough day. Being a crying mess they let me stay. I sat beside my friend bawling my eyes out while she was breathing through labor pains with two nurses hovering over her.
