Poached Eggs On Cabbage Recipe

Cooking Time: 15-20 minutes You will need for 4 servings:

1 medium-sized firm- salt and pepper hearted cabbage 1-2 tablespoons 1 pint basic white tomato pur§e sauce 4 eggs, poached

1 Remove the outer leaves of the cabbage, cut into quarters and remove the hard stalk. Wash well, then shred finely.

2 Cook in boiling salted water until tender, then drain thoroughly.

3 Make the white sauce, add seasoning and tomato pur6e.

4 Reheat the cabbage in the sauce. Put into a shallow serving dish and arrange the poached eggs on top.

Broad beans with bacon

Cooking Time: about 20 minutes

You will need for 4 servings:

8-10 spring onions 2 lb. broad beans

4 oz. lean bacon 1 pint white stock

1 oz. butter salt and pepper

2 level teaspoons flour chopped parsley

1 Cut the onions into two or three pieces, cut the bacon into strips.

2 Fry lightly in the butter until the onion is soft, but not coloured.

3 Add the flour and mix in well.

4 Add the beans and stock, stir until boiling, then cook slowly until the beans are tender.

5 Correct the seasoning and turn into a serving dish. Sprinkle the top with parsley.
