Potato And Leek Fry Recipe
Cooking Time: 15-20 minutes You will need for 4 servings:
1 lb. potatoes 4 oz. cooked chopped
2 leeks meat
2 oz. butter 1 oz. grated cheese salt and pepper little chopped parsley
1 Shred or grate the potatoes and chop the leeks finely.
2 Fry slowly in the butter until well browned on the under side. Turn over and continue the cooking until the potato is well cooked. Season carefully.
3 Add the meat and cheese and heat through.
4 Put on to a serving dish and sprinkle with chopped parsley.
Italian potato pie
Cooking Time: 20-25 minutes You will need for 4 servings:
1 small onion, peeled 1 oz. seedless raisins and chopped 1 hard-boiled egg,
1 oz. butter sliced
8 oz. cooked minced salt and pepper meat 1 lb. mashed potato
1 14-oz. can tomatoes little milk
2-3 olives, sliced
1 Sautd the onion in the butter in a saucepan until soft.
2 Add the meat, olives, raisins and tomatoes.
3 Stir all together until quite hot. If the mixture is a little thin, add 1 level dessertspoon cornflour mixed smoothly with a little cold water. Bring to boiling point and boil for 1 minute.
4 Add hard-boiled egg and correct the seasoning.
5 Pour into a fireproof dish, cover with mashed potato and brush over with a little milk.
6 Bake for about 20 minutes in a moderately hot oven (375°F – Gas Mark 5).
