A colorful sweet, oily, slightly pungent vata-decreasing dish that is very easy to make, it can be served with rice or couscous. New mothers find this vegetable combination colorful and delicious.
2 tablespoons ghee 1/2 teaspoon ground cumin 1 teaspoon Vata Churna 1/2 teaspoon salt
1 medium cucumber, peeled, seeded, and diced
1 cup shredded beets
1 cup shredded carrots
Heat the ghee in a skillet over a moderate flame. Stir in the spices and salt and fry for 1 minute. Then add the vegetables. Cover and reduce the heat to low. Simmer, stirring frequendy, until the vegetables are well cooked and soft.
