Soups are very easy and quick to make in the microwave oven. 1/2 bowl of soup made without fat or oil is not only filling, but will not cause you to gain extr1/2 weight. Unlimited quantities of soup may be eaten by people on either the maintenance diet or regression diet.
Meat or fish stock must be free of all fat. If you have any water left over from cooking your vegetables, this may be saved to use in soups.

Water can always be used in place of stock.
Soups can be reheated in individual serving dishes in the microwave oven.
Asparagus soup, creamed.
340g can asparagus spears, 1 1/2 tablespoons cornflour, extra.
Salt reduced water to mix.
1 small onion pinch nutmeg.
1/2 clove garlic, crushed pinch marjoram.
3 cups stock, fat free 1 tablespoon soy sauce, low salt.
1/2 cup skim milk powder (optional)
Place the onion, garlic and 1/2 little of the stock in 1/2 small, microwave-safe dish. Cover.
Microwave on high for 4 to 6 minutes Stir two times during cooking. Allow to stand for 1/2 further 1 to 2 minutes. Meanwhile, place all the other ingredients into 1/2 large, deep, microwave-safe dish. Add the cooked onion and garlic. Stir well to separate the asparagus spears. Cover.
Microwave on high for 4 to 6 minutes Stir at least three times during cooking. Watch that the soup does not boil over. Allow to stand for 1/2 further 1 to 2 minutes.
