Cooking Time: 20 minutes.

You will need for 4 servings:

11 lb. onions cayenne pepper.

1 oz. Butter 1 oz. Flour 1 pint milk salt and pepper.

Cooked ham.

2 oz. Grated Parmesan or Gruyfere cheese.

1 Peel the onions, cut into thick slices and cook in boiling salted water until tender.

2 Drain and put half into a greased fireproof dish.

3 Make a sauce with the butter, flour and milk. Season well.

4 Pour some of the sauce over the onions.

5 Cover with the chopped ham and the rest of the onions and the remaining sauce.

6 Sprinkle with cheese and bake in a hot oven (425°F – Gas Mark 7).

Mushroom and fish pie.

Cooking Time: 20 minutes You will need for 4 servings:

2 onions, peeled and salt and pepper.

Finely chopped lemon juice.

2 oz. Butter 1 lb. Cooked, mashed.

4-6 oz. Mushrooms potato.

1 lb. Fillets of white little milk fish chopped parsley.

1 Fry the onion in the butter until soft.

2 Add the chopped mushrooms and cook over a gentle heat for about 5 minutes. Season.

3 Put half the fish into a greased fireproof dish, add half the mushroom mixture, then the rest of the fish and the rest of the mushrooms.

4 Cover with the potato, brush over with a little milk and dot with butter.

5 Bake in a moderately hot oven (375°F – Gas Mark 5).

6 Sprinkle with parsley before serving.
