This easy-to-make dish adds sweet and salty tastes to the meal. It is best served with steamed or sauteed vegetables. As part of a balanced meal, this pilaf is good for everyone.
Makes abut 1 cup
3 tablespoons ghee or unsalted butter
i stalk celery, chopped
1 cup white rice or brown as a substitute
1/2 teaspoon crushed dried basil or 1 teaspoon chopped fresh
1 tablespoon chopped parsley 1/2 teaspoon salt
1/2 teaspoon pepper, or to taste
2 cups water or Vata or Pitta Broth
Melt the ghee in a 2-quart saucepan and saute the celery. Add the rice and stir about 1 minute, or until the rice is transparent. The ghee should just cover the rice. Add the basil, the parsley, the salt, and the pepper. Then stir in the water or broth. Bring to a boil, reduce the heat to low, and simmer, covered tightly, for about 20 minutes, or until all the water is absorbed. Fluff with a fork and serve.
note: For Pitta, omit the basil and increase the parsley to taste.
