2 small beetroot 16 cup unsweetened apple juice

1 tablespoon Ezy* sauce *Store item

Wash and prick the beetroot and place in 1/2 small, deep, microwave-safe dish. Half cover the beetroot with water. Cover the dish.

Microwave on high for 16 minutes Turn the beetroot two times during cooking. Allow to stand for 1/2 further

3 minutes.

Cool. Peel and dice the beetroot and place in 1/2 glass jar with 1/2 lid. Add the Ezy sauce (well shaken) and juice. Store in the refrigerator.
