Tomato And Spaghetti Bake Recipe

Cooking Time: 25-30 minutes

You will need:

8 oz. tomatoes, peeled and sliced salt and pepper pinch tarragon

4 oz. cooked spaghetti

3 oz. grated cheese 1 pint white sauce (82)

1 egg

1 Put half the tomatoes into a greased fireproof dish. Add salt and pepper, a pinch of sugar and a pinch of chopped tarragon if available.

2 Cover with half the spaghetti and half the cheese.

3 Repeat the layers finishing with cheese, reserving a little to sprinkle over the dish before baking.

4 Make up the white sauce, allow to cool a little then add the beaten egg.

5 Pour the sauce over the top and sprinkle with the remaining cheese.

6 Bake for about 25 minutes in a very moderate oven (335°F – Gas Mark 3).

Scalloped tomatoes

Cooking Time: 20-25 minutes You will need for 4 servings:

4 oz. breadcrumbs 1 lb. tomatoes, peeled 2 medium-sized and sliced onions, peeled and pinch sugar chopped 1 tablespoon grated 2 oz. butter cheese salt and pepper

1 Grease a pie dish and sprinkle a layer of breadcrumbs in the bottom.

2 Cook the onion in a little of the butter until soft and lightly browned.

3 Put half the tomatoes into the dish, sprinkle with salt and pepper and a pinch of sugar.

4 Add half the onion.

5 Repeat the layers, reserving 1 tablespoon breadcrumbs.

6 Mix the remaining breadcrumbs with the cheese and sprinkle on top.

7 Dot with the remaining butter and bake for 20-25 minutes in a moderate oven (350°F -Gas Mark 4).
