Tomato Surprise Recipe
Cooking Time: 10-15 minutes
you wili need for 4 servings:
4 large, firm 1 dessertspoon tomatoes breadcrumbs
2 large mushrooms salt and pepper
1 oz. butter 4 eggs
1 Cut a slice from the stalk of each tomato and carefully scoop out the pulp. Remove the seeds and chop the pulp.
2 Chop the mushrooms and fry in the butter.
3 Add the tomato pulp, breadcrumbs and salt and pepper and mix all well.
4 Put a little of this mixture into each tomato case.
5 Break the eggs carefully and drop one into each tomato case.
6 Add a little salt and pepper and bake in a moderate oven (350Â°F – Gas Mark 4) until the egg is lightly set.
Cooking Time: 15-20 minutes You will need for 4 servings:
4 large firm tomatoes 2 tablespoons breadcrumbs 2 tablespoons grated cheese little chopped parsley
1 tablespoon chopped cooked ham salt and pepper 1 oz. butter
4 rounds of buttered toast
1 Cut a slice from the stalk end of each tomato and remove the pulp.
2 To the pulp, add the breadcrumbs, cheese, ham and parsley and season carefully.
3 Re-fill the tomato cases, sprinkle a few breadcrumbs on top and add a small knob of butter.
4 Bake about 15 minutes in a moderate oven 350Â°F – Gas Mark 4).
5 Serve on the rounds of buttered toast.
