Vegetarian Salads Recipe

You will need for 4 servings:

1 lettuce 4 oz. cream cheese

2 large fresh pears or 2 oz. chopped dates

1 small can 1 oz. chopped walnuts lemon juice seasoning

1 Prepare the lettuce, shred the outer leaves and keep the heart for garnish. Put the shredded lettuce on to a serving dish.

2 Peel and halve the pears, remove the core and a little of the flesh.

3 Sprinkle the pears with lemon juice.

4 Put the flesh cut from the pears into a bowl with the cheese, dates and nuts and mix well. Add seasoning as required.

5 Pile a little on each pear and roll the rest into small balls.

6 Arrange the pears and the balls on the lettuce and decorate with the heart of the lettuce.

7 Serve salad dressing separately.

Vegetarian salad 2

You will need for 4 servings:

1 lettuce 2 oz. seedless raisins

1 small head celery 1 oz. sultanas

2 apples mayonnaise (see page

2 oz. hazelnuts or 82) walnuts 2 oz. grated cheese

1 Line a salad bowl with the lettuce.

2 Chop the celery, peel, core and chop the apples.

3 Mix the celery, apples, chopped nuts, raisins 5 Pile on top of the lettuce and sprinkle with and sultanas together. grated cheese.

4 Add enough mayonnaise to moisten.
