2 spring onions, finely chopped

130g Pancetta

300g frozen peas

1tbsp flour

5tbsp goose fat

1 bulb garlic, crushed

1kg Maris Piper potatoes, peeled and quartered

METHOD

1. Preheat the oven to 180°C /Gas mark 6.

2. Parboil the potatoes for 5 mins with a pinch of salt. Spoon the fat into a tray and heat gently. Drain, shake, then tip the potatoes into the tray. Season, add garlic, then roast for 45 mins.
